Mui Kee opening in Singapore as restaurant

Hong Kong hawker stall Mui Kee, known for its Cantonese-style congee, is set to debut as a fully fledged restaurant in Singapore.

The hawker stall which has traded in Mong Kok since 1979 is partnering with Singapore F&B company Les Amis Group for its first overseas outpost. The group runs the Michelin two-star restaurant Les Amis among its 15 Singapore dining venues.

Following eight months as a pop-up at Casa Verde cafe in Singapore Botanic Gardens, Mui Kee is taking over a space vacated by Caveau Bar in Shaw Centre on Orchard Road. When the 50-seat restaurant opens on March 26, diners will have more options. The menu will feature 18 varieties of congee – double the number offered at the pop-up.

Signature congees include parrot-fish belly, dace fish balls and pork meatballs. There will also be premium ingredients such as Alaskan crab legs, Hokkaido scallops and braised baby abalones.

Mui Kee’s famed congee is brewed over five hours, the process starting with seasoning raw rice grains with mashed century eggs cooked with beancurd skin to make the grains smoother. The mixture is then stirred into pork-bone and fish stock every five to 10 minutes. The congee is cooked in old-school copper pots.

As well as congee and desserts, the menu has been expanded to include house-made chee cheong fun stuffed with dough fritters and shredded duck with preserved vegetables and noodles. The line-up of claypot dishes is available only for dinner and supper (the restaurant will be open until 2am on Fridays and Saturdays).

Mui Kee has roots as a tai pai tong (street stall) started by the late Madame Mak Mui in 1979.

Todayiot is run by its third-generation owner Choi Kok Tung, who started mastering the family heirloom congee recipe when he was 22. He will visit the Singapore restaurant every quarter to ensure consistent quality.
